CUSTARD CAKE

Let us make custard cake. Custard cake is a chiffon cake with a topping of custard.


A.
1/2 cup sugar - caramelized in baking pan until lightly brown

B. Custard Mixture:
4 pcs. egg yolks
1 can evaporated milk
1 can condense milk
lime rind

C. Batter Mixture:

(mix & sift together)
3 cup cake flour
1 tsp baking powder
1 cup sugar

(egg yolk mixture)
3/4 cup oil
10 pcs. egg yolk
1 cup pineapple juice
*add the egg yolk mixture in the middle of the cake flour mixture

D. Merigue
10 egg whites
1 tbsp sugar

PROCEDURE:
1. Add sugar (1 cup) gradually, continue beating.
2. Pour egg yolk mixture gradually.
3. Put the beaten egg whites in the oven.
4. Pour batter mixture in the rectangular baking pan and bake for 45 minutes.
